Teriyaki Beef with a side of Weird Weather...

Well it's safe to say that the weather here in Regina, SK has definitely gone haywire! First we end up with nasty cold temperatures that are in the minus 50's and then to top it off we get winds almost at 100 km an hour! This has definitely been a weird winter...to say the least..

But anyways lets get back to the important stuff..such as the yummy dish I made for supper the other night..

 I ended up making a teriyaki beef stirfry. It turned out really good! I marinated the beef all day in a mixture of soy sauce, vinegar, splenda, ginger, garlic, green onions, and crushed red pepper flakes.

I decided to add in broccoli, baby corn, mushrooms and peppers for veggies.


 
After I finished prepping all of the veggies, I took out the meat from the fridge and brought out the WOK! I haven't used my wok in quite a while, so I figured this would be the perfect chance!
I added 2 TBSP of olive oil to the wok and turned it on high.
Once the oil was nice and hot, I added the beef and cooked it till was fully cooked through.
I completely forgot how hot that wok gets, especially with the oil, its safe to say I encountered quite a few hot spurts of oil....
 

Once the beef was all cooked through, I quickly took it out of the pan and and added my veggies to the wok. I like my veggies to be just heated through with a crunch to them.
As a side, I prepared cauliflower rice!
I used my amazing food processor that I recently got for xmas. Let me be the one to tell you that this is a great low carb substitution for the real thing. It may have a slightly different flavour but the texture is bang on and you wouldn't even realize your not eating actual rice because the teriyaki sauce masks the cauliflower taste. 

After 2 minutes of sautéing the veggies, I added the beef back in, gave it a few stirs and VOILA!

It smelt insanely good in the house and to top it off it actually tasted really yummy!
Will definitely be making this again.
